Lunch Recipes Kids will Eat
What are you feeding your kids for lunch? I ask myself that all the time. The fact is kids typically eat at school and we often find ourselves unprepared for a healthy lunch that they will actually eat. The key to finding lunch ideas that they will like is thinking of the things they eat most often and tweaking the presentation.
My kids really like things that are small. For instance, instead of bread, we may make sandwiches on small wheat rolls. Roll up meat and cheese in small tortillas. Make pizza’s on english muffins. There are a few key things to remember to make this a stress free time;
- Make it quick.
- Make it simple.
- Make it with things they like (don’t make deviled ham unless you KNOW they like it)
- Experimenting is for those times you actually have time.
- Use what you already have in the refrigerator or pantry.
Break one english muffin in half
Spread spaghetti sauce or pizza sauce over both sides
Place toppings of the child’s choice on top (ie. pepperoni’s cut up, ham cut up, pineapple pieces, veggies diced)
Sprinkle cheese over the toppings and pop in a 400 degree oven for 8-10 minutes or until hot. If you are in a real time pinch, put them in the microwave oven for 1 minute.
You cannot go wrong with this healthy version of a child’s favorite meal.
ANTS ON STICKS

Ingredients:
* 1 large stalk celery, cut into 3 pieces
* 3 tablespoons peanut butter
* 1 teaspoon ground cinnamon
* 2 tablespoons raisins
Directions
1. Place the celery pieces on a clean surface, hollow part facing up, and sprinkle evenly with cinnamon. Spoon peanut butter into the hollow, and arrange raisins on top.
CRUNCHY CHICKEN FINGERS

Ingredients
* 2 pounds skinless, boneless chicken breast halves – cut into strips
* 2 eggs, beaten
* 1/2 cup milk
* 1 (12 ounce) package tortilla chips, crushed
Directions
1. Preheat oven to 400 degrees F (200 degrees C).
2. Mix egg beat and milk in a shallow dish or bowl; place crushed chips in a separate shallow dish or bowl. Dip chicken first in egg mixture, then in crushed chips to coat. Place coated chicken on an ungreased cookie sheet.
3. Bake in preheated oven for 10 minutes; turn sides and bake for another 10 minutes.
TUNA CHEESIES

Ingredients
* 2 (6 ounce) cans tuna packed in water, drained
* 3 tablespoons mayonnaise, or to taste
* 1 teaspoon celery salt
* 1 teaspoon onion powder
* 1 teaspoon garlic powder
* 1/3 cup chopped celery
* 1/3 cup chopped onion
* 1/4 cup chopped yellow bell pepper
* 2 tablespoons butter
* 3 English muffins, split
* 6 slices American cheese
* 6 slices fresh tomato
Directions
1. Preheat oven to 200 degrees F (95 degrees C).
2. Flake the tuna into a medium bowl. Mix in the mayonnaise, celery salt, onion powder, and garlic powder. Stir in celery, onion, and yellow bell pepper.
3. Butter English muffin halves, place them on a baking sheet, and bake 3 minutes in the preheated oven, until lightly browned. Remove from oven. Spoon tuna mixture onto each muffin half, and top each with a slice of cheese. Return to the oven, and continue baking until the cheese has melted, about 8 minutes. Remove, and top each with a tomato slice to serve.
