Breakfast Recipes for Busy Families
Here are some breakfast tips for the family on the run. If your kids are like mine they sometimes eat breakfast on the way to school. Let me show you share inventive ideas on how to get them to eat and fuel up for a long school day.
- We love fruit so I rinse it and put it in baggies to take on the run.
- Mini bagels and cream cheese are a yummy, filling breakfast. For more nutrition, I purchase 100% whole wheat bagels and light cream cheese.
- Cereal lovers? I mix in more healthy cereal with their favorites and take them along in baggies.
- Always have some granola or breakfast bars handy. These are portable and the kids love them.

Here are some ways to make great breakfast ideas for the days we aren’t eating in the car.
HAM and CHEESE BREAKFAST SANDWICH
Toast 1 english muffin (choose whole wheat for a healthier option)
Beat 1 egg w/a splash of milk in a small bowl
Pop it in the microwave for 45 seconds
Place one piece of cheese on top and melt for 15 seconds.

Voila! You have a healthy breakfast that will help them make it through until lunch. The mixture of carbohydrates, protein, and fat make this a great choice.
FRUIT PANCAKES
2 cups Pancake mix of your choice
1 1/3 c milk
1 egg
Mix all of the above ingredients together.
Add in 1/2 cup mashed bananas, blueberries, or finely chopped strawberries and fold into the mix.
Bake on hot, lightly greased griddle until the bubbles break on the surface.
Top with syrup, powdered sugar, or nothing at all. They are a healthy, nutrient filled breakfast that the whole family will enjoy.
Hint: I refrigerate the leftovers for the mornings to come. Just pop them in the toaster and it couldn’t be easier.
MORNING GLORY MUFFINS

Ingredients
* 2 cups all-purpose flour
* 1 1/4 cups white sugar
* 2 teaspoons baking soda
* 2 teaspoons ground cinnamon
* 1/4 teaspoon salt
* 2 cups shredded carrots
* 1/2 cup raisins
* 1/2 cup chopped walnuts
* 1/2 cup unsweetened flaked coconut
* 1 apple – peeled, cored and shredded
* 3 eggs
* 1 cup vegetable oil
* 2 teaspoons vanilla extract
Directions
1. Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
2. In a large bowl, mix together flour, sugar, baking soda, cinnamon, and salt. Stir in the carrot, raisins, nuts, coconut, and apple.
3. In a separate bowl, beat together eggs, oil, and vanilla. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups.
4. Bake in preheated oven for 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
*These are great to make extra and freeze for later. You could make these an easy on-the-go snack too.

Ingredients
* 1 teaspoon butter
* 1 egg
* 2 tablespoons milk
* 1 slice Cheddar cheese
Directions
1. Melt butter in a small skillet over medium heat. In a small bowl, whisk together egg and milk; pour into skillet. Cook until bubbles appear, then flip over. Cover with cheese. Cook 10 seconds, or until cheese is melted.
